“ We wanted to make our special trip to Edinburgh extra special - and I don't think either of us expected to be quite so blown away. We were greeted by Emily who took no time to make us feel at home. The service never felt stiff and was the perfect level of casual, while remaining incredibly attentive and personable. We were seated at the chef's table and got to watch all of the magic being made - thank you so much for this, it really was the cherry on top. Sophia answered all of our questions and even gave us a few little extras whenever something they were prepping piqued our interest. We were going to try and be sensible, knowing we were opting for the wine pairings, but their curated cocktails were irresistible; I loved my martini with pine nut oil, but holy cow that bramble negroni was another level. If the cocktails we started with weren't a big enough sign we were in for something special, our first dish, the vegan foix grais, really set the standard; I didn't know you could get so much rich umami without meat. I'm going to resist going into painful detail about each dish, but I'll tell you that the Foix Gras wasn't even our favourite dish. The wine pairings were to die for, and each complimented it's dish beautifully (highlights being the Nero D'Avola Rose and the dessert wine that was almost as old as I am). Not only were the wines and cocktails fantastic, but James also talked us through the range of whiskeys they produced which were all uniquely stunning. There are plenty of expensive places in Edinburgh to have a meal, but this was so much more than that; it was an experience - and one we will never forget (even after quaffing so much excellent wine and spirits). I cannot recommend it enough. ”
